Green Globe artichoke seeds are a popular choice for home gardeners, as they are easy to grow and produce a large harvest of delicious artichokes. The Green Globe variety is known for its large, deep green flower heads with thick, fleshy scales and a solid center.

Green Globe artichokes are a perennial plant in USDA zones 7-10, but can also be grown as an annual in colder climates. To start seeds indoors, sow them 2-3 months before the average last frost. Plant the seeds 1/4" deep in pots filled with seed starting mix and keep them moist at a temperature of 60-70 degrees F. Once the seedlings have a few leaves, transplant them into larger pots or individual cells.

Artichokes will typically begin to produce buds in the second year. To harvest, cut the buds when they are 3-4 inches in diameter and before they start to open.

To eat, simply peel back the outer scales until you reach the tender heart. Then, slice the heart into thin pieces and enjoy.
